Bittersweet

This week has definitely been taxing on me. Friday was my last day of work at the junior high. We had a nice final faculty meeting where they said something nice about those leaving. They also gave me this gorgeous matted framed picture of a black and white front view of the school and all the teachers had signed it for me. The principal told me she had interviewed 10 people to take over my Math position the day before and didn't like any of them. She said no one could fill my shoes. I cried like crazy that last day. It was so bittersweet and I know I must be crazy to leave without having another job lined up in Austin just yet. But I have faith that I will end up where I am needed. Trust. I am ready to start a new chapter in my life.

Saturday was the night of my sister's graduation from high school! Our family took up 20 seats and we made complete fools of ourselves! I think the whole auditorium knew who we were cheering for!!

We didn't get out till LATE so we ended up at IHOP afterwards. We had a party for her today at the house. I'll have to post those pictures tomorrow so that you're not too bored.

Food-wise these past few days have been routine. Things are so crazy I've been keeping it simple with normal foods.

Hard-boiled egg with oatmeal heated with coconut milk, pumpkin, chopped dry figs, apple, and spinach.
Another yummy breakfast of oats, spinach, sliced banana, kiwi, slivered almonds, and the last of my Chobani greek yogurt.
Lunch: Quesadilla with goat cheese, avocado, basil, fresh ground pepper, and pinto beans with grilled asparagus.
Lunch to go: Spicy veggie tempeh, sweet potato fries, zucchini, spinach, and Organicville barbeque sauce.
And the simplest and best: Ezekiel toasted bread with Maranatha smooth and creamy almond butter, Crofter's strawberry jam, and zucchini slices with steamed spinach on the side.
Have I mentioned how much clearer my skin is now? I think it's due to all the greens I've been eating! Score!! I shouldn't jinx myself though.
