Yummy breakfast ahead: oats, slivered almonds, spinach, half a chopped gala apple, kiwi, and coconut milk with a touch of Chobani Greek yogurt (on sale at Whole Food)!
Lunch was interesting. I tried to make my own tomato sauce out of cherry tomatoes, olive oil, lemon juice, salt, and pepper. Fail! I think I put too much lemon in this stuff. I spread this on a brown rice tortilla and baked it with spinach, tongol tuna, goat cheese, and zucchini rounds. Goat cheese makes everything better in my book!
Snack: Udi's gluten free original granola with some fresh strawberries and so delicious vanilla coconut milk ( my new obsession).
Dinner was so much fun to eat! Chopsticks my friends....you eat slower and get some good hand coordination skills practice. I ate my steamed spinach, baked Japanese sweet potato fries, and zucchini squash while reading Jane Austen Ruined My Life.
In other news: I've decided to make use of my summer and volunteer at the Tarrant County Food Bank. I'll be attending a one hour training and then volunteering about 3-4 hours of my time everyday. I need to give back to my community and I can set my own hours (unlike part-time work) and I still get to travel in between.Do you volunteer anywhere?
